Ingredients
  

  • 2-3 lean boneless, skinless chicken breasts or use thighs for extra juiciness
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion finely chopped
  • 3-4 cloves fresh garlic minced
  • 1 teaspoon Italian seasoning blend
  • 1/2 teaspoon crushed red pepper flakes optional, for a little warmth
  • 1 can crushed tomatoes 14.5 ounce
  • 1 cup light heavy cream or half-and-half for fewer calories
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons cornstarch for thickening (optional)
  • 2 tablespoons cold water to mix with cornstarch for thickening (optional)
  • Fresh parsley chopped (for a pop of color)
  • Salt and fresh black pepper to taste

Instructions
 

  • Simply place the raw chicken breasts at the bottom of your slow cooker. Layer with the chopped onion, minced garlic, Italian seasoning, a pinch of red pepper flakes (if desired for a little zing), and the crushed tomatoes. Pour the low-sodium chicken broth over all the ingredients, making sure the chicken is covered.
  • Secure the lid on your slow cooker. Cook on LOW for 6-7 hours, or if you're in a hurry, on HIGH for 3-4 hours. This gentle cooking method makes the chicken incredibly tender and blends all the festive flavors beautifully.
  • Once the chicken is super tender and fully cooked, carefully remove it from the pot. Use two forks to easily shred the chicken into lovely bite-sized pieces. Return the shredded chicken to the soup and give it a good stir.
  • Pour in the light heavy cream (or half-and-half for a lighter touch) and stir well. If you prefer a thicker soup, whisk together the cornstarch and cold water until smooth, then stir this mixture into the soup.
  • Gradually sprinkle in the freshly grated Parmesan cheese, stirring constantly to ensure it melts smoothly into a velvety consistency. Let the soup continue to simmer on LOW, uncovered, for another 20-30 minutes, allowing it to thicken slightly and for the cheese to fully embrace the flavors.
