  • 2 ounces Cream Cheese softened at room temperature, plain and unflavored

  • 1 pinch Sea Salt optional, helps balance sweetness or enhance savory
  • 0.5 teaspoon Cinnamon optional, for a warm flavor

Instructions
 

  • Whip Up the Batter: Grab your blender, food processor, or a bowl with a hand mixer. Combine the softened cream cheese, room-temperature eggs, and any optional flavorings you fancy (like sweetener, salt, cinnamon, or vanilla). Blend until the mixture is wonderfully smooth and completely lump-free.
  • Heat Your Pan: Place a small nonstick skillet (a 6-8 inch one is perfect for thin pancakes) over medium heat on your stovetop. Give it a light spritz of cooking oil or a tiny drizzle to prevent sticking – just a little is all you need for that perfect soft texture.
  • Pour and Swirl: Once your skillet is evenly heated, pour about 1/4 cup (60 mL) of the batter onto the hot surface. Immediately tilt and swirl the pan in all directions to spread the batter into a thin, even circle, much like a crepe.
  • Cook to Golden Perfection: Let it cook for about 1-2 minutes. You'll see tiny bubbles start to form around the edges, and the pancake will look set. Gently slide a spatula under it, and when it feels firm enough, carefully flip it over. Cook the second side for just about 1 minute more, until it's beautifully golden.
  • Serve & Enjoy: Repeat step 4 with the remaining batter, lightly re-greasing your pan as needed. Stack your easy cream cheese pancakes high and serve them immediately with your favorite healthy toppings like fresh berries, a drizzle of sugar-free syrup, or a spread of nut butter!
