Ingredients
  

  • 0.5 cup Blueberries
  • 0.5 cup Strawberries chopped
  • 1 tablespoon Sugar-Free Granulated Sweetener for berries
  • 0.75 cup Heavy Cream
  • 1 tablespoon Vanilla Extract
  • 1.5 cups Plain Greek Yogurt
  • 0.33 cup Sugar-Free Granulated Sweetener for yogurt

Instructions
 

  • Prepare the Berry Compote: In a small saucepan, combine the blueberries and chopped strawberries with the 1 tablespoon of sugar-free sweetener. Cook over medium heat for 5-8 minutes, stirring occasionally, until the berries are soft and have released their juices. Remove from heat and set aside to cool slightly.
  • Whip the Creamy Base: In a medium mixing bowl, use an electric mixer to beat the heavy cream, vanilla extract, and the remaining ⅓ cup of sugar-free sweetener until firm, stiff peaks form.
  • Combine with Yogurt: Gently fold the plain Greek yogurt into the whipped cream mixture until it's smoothly combined and light.
  • Assemble and Serve: Divide the creamy yogurt mixture into two bowls. Spoon the prepared berry compote over the top of each. For convenient meal prep, store any extra servings in an airtight container in the refrigerator.
