  • 0.5 cup ranch dressing or blue cheese dressing
  • 4 ounces cream cheese softened (1/2 cup)
  • 1 cup shredded cheddar cheese divided
  • 1 cup shredded mozzarella cheese divided
  • 3 green onions chopped, divided
  • Salt and freshly ground black pepper to taste
  • Cooking spray or olive oil for greasing (1 teaspoon)
  • Fresh parsley or chives chopped, for garnish (optional)

  • 1. Prep Your Oven & Dish: Preheat your oven to a cozy 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or a touch of olive oil – this helps prevent sticking!
  • 2. Get the Cauliflower Ready: Wash and chop your cauliflower into small, easy-to-eat florets. For a perfectly tender texture, you can steam or lightly blanch these florets in boiling water for about 3-5 minutes until they're just tender-crisp. Make sure to drain them really well and pat them dry to avoid a watery casserole.
  • 3. Whip Up the Creamy Sauce: In a large mixing bowl, combine the buffalo sauce, the softened cream cheese, and the ranch dressing. Stir everything together until it's wonderfully smooth and creamy. If your cream cheese is a bit stubborn, a quick 10-second microwave zap can help it soften up.
  • 4. Combine & Coat: Add your cooked chicken and the prepared cauliflower florets to the bowl with the creamy buffalo sauce. Gently toss everything until the chicken and cauliflower are thoroughly coated. Now, stir in about half of the shredded cheddar cheese and half of the shredded mozzarella cheese.
