  • 1 pound fresh Shrimp peeled and deveined (tails off for ease)
  • 1 tablespoon Olive Oil
  • 1 tablespoon Cajun Seasoning divided
  • 2 tablespoons unsalted Butter
  • 0.5 medium Onion chopped
  • 1 Red Bell Pepper chopped
  • 0.5 cup Celery chopped
  • 2 teaspoons Minced Garlic
  • 1 cup Heavy Whipping Cream
  • 0.33 cup low-sodium Chicken Broth

Instructions
 

  • Sauté Shrimp: Heat the olive oil in a large skillet over medium-high heat. Season the shrimp with almost all (save 1 teaspoon) of the Cajun seasoning, tossing gently to coat. Cook the shrimp for about 2-3 minutes per side until beautifully seared and cooked through. Remove the shrimp from the skillet and set aside.
  • Soften Veggies: Add the butter to the same skillet and reduce the heat to medium. Stir in the chopped onions, red bell pepper, and celery. Sauté for about 5-7 minutes, or until the vegetables begin to soften and become fragrant.
  • Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant, being careful not to burn it.
  • Create Creamy Sauce: Pour in the chicken broth and heavy whipping cream. Add the remaining 1 teaspoon of Cajun seasoning. Stir everything together well to combine the flavors.
  • Thicken & Combine: Bring the sauce to a gentle simmer and let it cook for 5-7 minutes, stirring occasionally, until it thickens slightly to a beautiful creamy consistency.
  • Serve: Return the cooked shrimp to the skillet, gently tossing to coat them in the delicious creamy Cajun sauce. Serve immediately and enjoy your healthy, flavorful summer meal!
