Creamy Chicken Comfort Soup

Ingredients
  

  • 1 tablespoon Olive oil
  • 1 medium Onion diced (about 1 cup)
  • 8 ounces Carrots peeled and diced into 1/2-inch cubes
  • 6 cloves Garlic minced
  • 1 head Cauliflower cut into large florets (about 4-5 cups)
  • 1 pound Boneless, skinless chicken breasts
  • 5 cups Reduced-sodium chicken broth
  • 2 teaspoons Italian seasoning
  • 1 cup Peas (fresh or frozen)
  • 1 cup Half and half (or 1/2 cup for a lighter option)
  • 2 teaspoons Sea salt to taste
  • 0.5 teaspoon Black pepper to taste

Instructions
 

  • In a large Dutch oven or heavy pot, warm the olive oil over medium heat until it shimmers. Toss in the diced onions and cook gently for about 5 minutes until they start to soften and turn slightly golden.
  • Stir in the diced carrots and minced garlic. Continue to sauté for another 5 minutes, letting the flavors meld beautifully.
  • Add the whole chicken breasts, large cauliflower florets, Italian seasoning, and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cook for about 20 minutes, flipping the chicken halfway through, until it's thoroughly cooked and reaches an internal temperature of 165°F (74°C).
  • Carefully transfer the cooked chicken breasts to a large bowl. Using two forks or a hand mixer (for extra ease!), shred the chicken into bite-sized pieces. Set aside for later.
  • With a slotted spoon, scoop out all the cooked cauliflower florets and about 1/2 to 1 cup of the broth into a blender. Blend until completely smooth and creamy – this is your healthy, secret thickener!
  • Pour the smooth cauliflower puree and the shredded chicken back into the pot with the remaining soup. Stir in the peas and the half and half. Let the soup warm through for 3-4 minutes, ensuring it's hot but not boiling. Taste and adjust seasoning with sea salt and black pepper as needed. Ladle into bowls and enjoy your wholesome, comforting soup!
