Creamy Christmas Scalloped Potatoes (Easy & Healthy!)

This festive and easy recipe for creamy Christmas scalloped potatoes is a perfect healthy side dish for your holiday meal. Layers of tender potatoes baked in a rich, cheesy sauce.

Ingredients
  

  • 2 pounds Russet potatoes (peeled and thinly sliced)
  • 4 tablespoons unsalted butter
  • 1 small onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1/4 cup whole wheat flour (or all-purpose, or gluten-free 1:1)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • Chopped fresh parsley (for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with butter or cooking spray.
  • In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion turns translucent and the garlic smells fragrant.
  • Sprinkle the flour over the onion and garlic mixture. Stir well to combine and cook for just 1 minute until the flour is lightly golden.
  • Gradually pour in the whole milk and heavy cream, whisking constantly to prevent any lumps from forming. Continue to cook for about 5 minutes until the mixture thickens into a lovely sauce.
  • Reduce the heat to low. Stir in the cheddar cheese, Parmesan cheese, dried thyme, sea salt, and black pepper. Mix until the cheeses are completely melted and the sauce is smooth and creamy. Remove from heat.
  • Arrange half of the thinly sliced potatoes in a single layer in your prepared baking dish, slightly overlapping them. Pour half of the creamy cheese sauce evenly over the potatoes.
  • Repeat the layering process with the remaining potatoes and finish with the rest of the cheese sauce on top.
  • Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45 minutes.
  • Remove the foil and continue baking for another 15-20 minutes, or until the top is golden brown and bubbly, and the potatoes are perfectly tender when pierced with a fork.
  • Carefully remove the dish from the oven and let it cool for a few minutes before serving. Garnish with fresh chopped parsley for a festive touch!
