  • 1 large head cauliflower
  • 0.5 tablespoon Kosher salt
  • 2 ounces cream cheese
  • 0.33 cup heavy cream
  • 0.5 tablespoon mustard powder (or a dash of Dijon mustard)
  • 1 cup shredded mild cheddar cheese
  • 8 slices bacon diced and cooked until crisp (optional)
  • black pepper freshly ground, to taste
  • Kosher salt additional, to taste

Instructions
 

  • First, gently separate a large head of cauliflower into small, bite-sized florets, aiming for pieces no larger than 1 inch. This helps them cook evenly and absorb the cheesy goodness.
  • Place the florets in a medium saucepan. Add ½ tablespoon of kosher salt and enough water to cover the cauliflower halfway. Bring to a boil, then reduce heat and simmer for about 5 minutes until the cauliflower is just tender-crisp. Don't overcook!
  • Drain the cooked cauliflower very well, letting it sit in a colander for at least 5 minutes to remove excess water. This prevents a watery sauce.
  • While the cauliflower drains, melt the cream cheese with the heavy cream in a small saucepan over medium-low heat. Stir in the shredded cheddar cheese until it's perfectly melted and smooth. Whisk in the mustard powder, then season with a pinch of salt and a grind of fresh black pepper to your liking.
  • In a large bowl, combine the well-drained cauliflower and the crispy diced bacon (if using). Pour the rich cheese sauce over the top and gently stir everything together until every floret is coated. Taste and adjust seasoning with more salt and pepper if needed.
