  • 16 ounces cooked chicken chopped
  • 1 batch Keto Alfredo Sauce prepared
  • 2 cups shredded mozzarella cheese
  • 9 ounces frozen spinach thawed and thoroughly drained
  • 8 ounces baby bella mushrooms sliced
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil

Instructions
 

  • Get ready by preheating your oven to a cozy 400°F (200°C).
  • First, whip up your Keto Alfredo Sauce as directed and let it cool a bit while you gather the rest of your casserole goodies.
  • Heat the olive oil in a large skillet. Toss in the sliced mushrooms and sauté them until they get a lovely golden hue. Set them aside to cool down a touch.
  • Now, in a large mixing bowl, combine the cooled mushrooms, chopped chicken, chicken broth, well-drained spinach, your delicious Alfredo sauce, and 1 cup of the mozzarella cheese.
  • Stir everything together until it's beautifully mixed. Then, pour this wholesome blend into a 9x9 casserole dish (lightly sprayed with olive oil for non-stick ease).
  • Sprinkle the remaining mozzarella cheese evenly over the top. Pop it into the oven for about 25 minutes, or until the cheese is gloriously golden and bubbly. Let it rest for a few minutes before diving in!
