Instructions
Warm the olive oil in a saucepan over medium heat.
Add the chopped onions and jalapeño to the pan and sauté gently until they soften and become fragrant, about 5-7 minutes.
Lower the heat to medium-low. Stir in the heavy whipping cream, then gradually add both cheeses. Keep stirring gently until all the cheese is completely melted and the queso is smooth and creamy.
Stir in the chopped Roma tomato and half of the fresh cilantro. Season with salt and pepper to your liking.
Give it a final stir to combine everything well. Serve your warm queso immediately, garnished with the rest of the fresh cilantro. Enjoy!
