Ingredients
  

  • 1 tablespoon Olive Oil
  • 0.5 medium Onion chopped
  • 1 Jalapeño Pepper deseeded and finely chopped
  • 8 ounces White American Cheese shredded or cubed
  • 4 ounces Monterey Jack Cheese shredded or cubed
  • 0.25 cup Heavy Whipping Cream
  • 1 Roma Tomato chopped
  • 2 tablespoons Fresh Cilantro chopped, plus extra for garnish
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Warm the olive oil in a saucepan over medium heat.
  • Add the chopped onions and jalapeño to the pan and sauté gently until they soften and become fragrant, about 5-7 minutes.
  • Lower the heat to medium-low. Stir in the heavy whipping cream, then gradually add both cheeses. Keep stirring gently until all the cheese is completely melted and the queso is smooth and creamy.
  • Stir in the chopped Roma tomato and half of the fresh cilantro. Season with salt and pepper to your liking.
  • Give it a final stir to combine everything well. Serve your warm queso immediately, garnished with the rest of the fresh cilantro. Enjoy!
