- 2 tablespoons butter
- 0.5 yellow onion finely diced
- 10 cloves garlic minced
- 2 medium russet potatoes peeled and diced (about 4 cups)
- 32 ounces vegetable broth
- 1.5 cups whole milk
- 0.5 cup heavy cream
- 1 tablespoon all-purpose flour
- 8 ounces sharp cheddar cheese freshly grated
- salt and pepper to taste
- green onion for serving
Melt the butter in a large pot or Dutch oven over medium heat.
Add the minced garlic and diced onion, cooking for about 5-10 minutes until they become tender and translucent.
Stir in the diced, peeled potatoes and vegetable broth. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are very soft and easily pierced with a fork. Aim for smaller potato pieces, as they help naturally thicken the soup as they break down.
In a separate bowl or liquid measuring cup, whisk together the whole milk, heavy cream, and all-purpose flour until smooth. This creates your creamy base!
Pour the milk mixture into the simmering soup. Continue to simmer for about 10 minutes, stirring frequently, until the soup begins to thicken beautifully.
Remove from heat, then stir in the freshly grated sharp cheddar cheese until it's completely melted and smoothly combined.
Season the soup with salt and pepper to your personal taste.
Serve warm, garnished with fresh green onions and extra cheese if you like!
Enjoy this hearty and comforting Creamy Potato Soup, perfect for a cozy meal.
