Ingredients
  

  • 2 tablespoons butter
  • 0.5 yellow onion finely diced
  • 10 cloves garlic minced
  • 2 medium russet potatoes peeled and diced (about 4 cups)
  • 32 ounces vegetable broth
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 8 ounces sharp cheddar cheese freshly grated
  • salt and pepper to taste
  • green onion for serving

Instructions
 

  • Melt the butter in a large pot or Dutch oven over medium heat.
  • Add the minced garlic and diced onion, cooking for about 5-10 minutes until they become tender and translucent.
  • Stir in the diced, peeled potatoes and vegetable broth. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are very soft and easily pierced with a fork. Aim for smaller potato pieces, as they help naturally thicken the soup as they break down.
  • In a separate bowl or liquid measuring cup, whisk together the whole milk, heavy cream, and all-purpose flour until smooth. This creates your creamy base!
  • Pour the milk mixture into the simmering soup. Continue to simmer for about 10 minutes, stirring frequently, until the soup begins to thicken beautifully.
  • Remove from heat, then stir in the freshly grated sharp cheddar cheese until it's completely melted and smoothly combined.
  • Season the soup with salt and pepper to your personal taste.
  • Serve warm, garnished with fresh green onions and extra cheese if you like!
