  • 2.5 cups low-carb Chicken Broth (or vegetable broth for a vegetarian option!)
  • 1 cup Gouda Cheese (shredded) or creamy Ricotta Cheese
  • 0.5 cup Heavy Cream
  • 16 oz Roasted Red Peppers jar, well-drained
  • 1 clove fresh Garlic
  • Pinch Sea Salt to taste
  • Freshly ground Black Pepper to taste

Instructions
 

  • Blend It Smooth: Grab your blender or food processor. Add the Gouda cheese (or ricotta), heavy cream, roasted red peppers, chicken broth, and fresh garlic. Blend until everything is wonderfully smooth and creamy. Season with a pinch of salt and pepper to your liking.
  • Gently Simmer & Serve: Pour your blended soup into a saucepan. Heat it over medium heat, letting it come to a gentle simmer for about 5 to 7 minutes.
