Ingredients
  

  • 1 bag frozen broccoli rice (about 2 cups)
  • 2 cups freshly shredded cheddar cheese
  • 1 large egg
  • 2 tbsp almond flour
  • seasoning to taste (garlic salt recommended)

Instructions
 

  • Microwave the broccoli rice as per package instructions. Drain and squeeze out excess liquid, then let it cool.
  • Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a bowl, combine the broccoli rice, shredded cheese, egg, almond flour, and seasoning.
  • Form about 16 small balls from the mixture and place them on the baking sheet. Flatten them slightly with your hands.
  • Bake on the center rack for about 15 minutes until they begin to brown, then flip and bake for an additional 8-10 minutes.
  • Enjoy them on their own or with ranch dressing for dipping!
