Ingredients
  

  • 1 cup crushed pork rinds
  • 1 tsp kosher salt less if pork rinds are already salted
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • Black pepper to taste
  • 2 large eggs beaten (or heavy cream for an egg-free option)
  • 1 pound chicken breasts cut into 1-inch chunks

Instructions
 

  • In a shallow bowl, combine the crushed pork rinds, salt, smoked paprika, garlic powder, onion powder, and black pepper. Mix everything well.
  • In a separate shallow bowl, whisk the eggs (or heavy cream). Add the chicken pieces to the egg mixture and stir to ensure they are fully coated.
  • Working in batches, dip each chicken piece into the seasoned pork rind mixture, pressing gently to make sure the coating sticks well. Place the coated nuggets on a plate.
  • Air Fryer Method: Arrange the chicken nuggets in a single layer in your air fryer basket. Air fry at 400°F (200°C) for 8-10 minutes, flipping them halfway through, until they are golden brown and crispy. You might need to cook them in two batches depending on your air fryer size.
  • Oven Baked Method: Preheat your oven to 425°F (220°C). Place the nuggets on a baking sheet (using a wire rack can help them get extra crispy). Bake for 10-15 minutes, or until they are golden brown, crispy, and cooked through.
