Ingredients
  

  • 2 boneless, skinless chicken breasts cut in half lengthwise
  • 3/4 cup grated Parmesan cheese divided
  • 1/2 cup shredded provolone cheese
  • 6 tablespoons unsalted butter melted and divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 cup Panko breadcrumbs

Instructions
 

  • Preheat your grill pan to medium-high heat. If you don't have one, a regular skillet works perfectly!
  • In a small bowl, combine 4 tablespoons of melted butter with garlic powder, onion powder, salt, and pepper. Brush this yummy mixture generously over both sides of each chicken breast.
  • Place the seasoned chicken breasts on the hot grill pan. Cook for about 3-4 minutes per side, until they're nicely seared and almost cooked through (internal temperature around 160°F).
  • While the chicken cooks, mix ½ cup of Parmesan cheese with all the provolone cheese in a separate bowl.
  • Flip the chicken, then immediately sprinkle the mixed cheese (Parmesan and provolone) over each breast. Continue cooking for another 3-4 minutes, or until the chicken reaches 165°F and the cheese starts to melt.
  • Carefully transfer the chicken to a foil-lined baking sheet. Preheat your oven's broiler to high.
  • In another small bowl, mix the Panko breadcrumbs with the remaining ¼ cup Parmesan cheese and the last 2 tablespoons of melted butter. Sprinkle this mixture evenly over the melted cheese on each chicken breast.
  • Place the baking sheet under the hot broiler for 1-2 minutes. Watch very closely until the Panko topping turns golden brown and irresistibly crispy. It can burn fast!
  • Remove from the broiler and let the chicken rest for 5 minutes. This locks in the juices, making it super tender. Slice and serve your delicious, restaurant-style chicken!
