Every night can be taco night with these quick and easy crispy chicken tacos! Featuring a homemade McChicken-style sauce and a satisfying crunch, they're perfect for a summer meal.

Ingredients
  

Crispy Summer Chicken Tacos

  • 1 pound lean ground chicken
  • 2 teaspoons garlic powder
  • Salt to taste
  • black pepper to taste
  • 8 small flour tortillas
  • 1/2 cup breadcrumbs or crushed cornflakes/Rice Krispies for extra crisp
  • 1 cup shredded iceberg lettuce
  • 1-2 tablespoons olive oil or a pat of butter

American McChicken Sauce

  • 1/3 cup light mayonnaise
  • 1/2 teaspoon yellow mustard
  • 1/2 teaspoon garlic powder

Instructions
 

  • Whip Up the Sauce: In a small bowl, whisk together the light mayonnaise, yellow mustard, and garlic powder until it's smooth and creamy. Set it aside for later.
  • Season the Chicken: Grab a medium bowl and combine your lean ground chicken with the garlic powder, black pepper, and a sprinkle of salt. Mix it well with your hands.
  • Smash & Coat: Take each small flour tortilla and press a thin, even layer of the seasoned chicken onto one side, making sure it covers almost the entire surface. Then, gently sprinkle the breadcrumbs over the chicken, pressing them lightly to adhere for that ultimate crunch.
  • Get Sizzling: Heat a large skillet (cast iron works wonderfully!) over medium-high heat with a little olive oil. Once hot, place the tortilla chicken-side down into the pan. Cook for about 3-4 minutes until the chicken is golden brown and fully cooked through.
  • Flip & Crisp: Carefully flip the taco and cook on the tortilla side for another 1-2 minutes until it's beautifully golden and crispy. Repeat with the remaining tacos.
  • Assemble Your Taco: Spread a generous amount of your homemade McChicken sauce over the crispy chicken side. Pile on a mound of fresh shredded lettuce.
  • Fold & Enjoy: Fold your taco in half and take a big bite! Savor the crispy chicken, tangy sauce, and fresh crunch. It's fast food, but better and homemade!
