  • 1/2 cup shredded coconut (or flax seed meal for an alternative)
  • 1/3 cup Swerve Sweetener (or your preferred keto-friendly sweetener)
  • 2 teaspoons ground cinnamon
  • 6 tablespoons chilled butter cut into small pieces

  • 1/2 teaspoon ground cinnamon

Instructions
 

  • Get Ready: Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper. This simple step prevents sticking!
  • Mix Dry Ingredients: In a food processor, combine the almond flour, shredded coconut (or flax seed meal), 1/3 cup Swerve sweetener, and 2 teaspoons of ground cinnamon. Give it a few quick pulses to mix everything nicely.
  • Add Butter: Scatter the small pieces of chilled butter over the dry mixture. Pulse again until the mixture looks like coarse crumbs – this means the butter is well distributed and ready for baking!
  • Press & Bake: Spread this crumbly mixture evenly onto your prepared baking sheet. Cover it with another sheet of parchment or waxed paper. Now, use a rolling pin or your hands to press down very firmly. This is key to making sure your cereal holds together! Remove the top paper and bake for 20 to 30 minutes, or until it's beautifully golden brown.
  • Add Topping & Cool: While your cereal is baking, mix the topping ingredients (1 tablespoon Swerve and 1/2 teaspoon cinnamon) in a small bowl. As soon as you pull the cereal from the oven, sprinkle this delicious topping all over. Let it cool completely on the pan – this is where it gets wonderfully crisp! Once cool, break it into your desired cereal-sized pieces. Enjoy with your favorite milk!
