Large skillet
Mixing Bowl
- 8 slices thick bacon diced
- 0.5 white onion sliced thin
- 6 large eggs
- 1.5 cups half and half (half milk, half cream)
- 0.5 tsp kosher salt
- 0.25 tsp black pepper
- 0.25 tsp ground nutmeg
- 0.25 tsp cayenne pepper
- 1.5 cups shredded Swiss cheese
Preheat your oven to 375°F (190°C). Lightly grease a pie plate with butter or cooking spray to prevent sticking.
In a large skillet, cook the diced bacon and thinly sliced onion over medium heat. Sauté until the bacon is wonderfully crispy and the onions are soft and golden brown, usually about 15 minutes.
Carefully remove the cooked bacon and onions from the skillet and place them on a paper towel-lined plate to drain any excess fat. Set aside.
In a spacious mixing bowl, whisk together the eggs, half and half, kosher salt, black pepper, ground nutmeg, and cayenne pepper until everything is well combined and slightly frothy.
Gently stir the shredded Swiss cheese, the cooked bacon, and the sautéed onions into the egg mixture. Make sure they are evenly distributed.
Pour this flavorful mixture into your prepared pie plate.
Bake for about 45 minutes, or until the center of the quiche is firm and set. Let it cool slightly before slicing and serving.
This Crustless Quiche Lorraine is a fantastic low-carb option for breakfast or brunch. Loaded with savory bacon, onions, and Swiss cheese in a rich custard.
