Strawberries

  • 18-24 large fresh strawberries

Cheesecake Filling

  • 1 cup heavy whipping cream
  • 1 package full-fat cream cheese softened
  • 1/3 cup sour cream
  • 2/3 cup granulated low-carb sweetener (like erythritol or monk fruit blend)
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice optional, but brightens the flavor!

Optional Topping

  • 1/2 cup crushed graham crackers optional, for topping; omit for strict low-carb

Instructions
 

  • 1. Prep Your Strawberries: First, gently wash your strawberries. Trim off the green leafy tops and carefully slice each berry in half lengthwise. For stability, delicately shave a tiny bit off the rounded back of each strawberry half so they sit flat on your platter. Then, using a small spoon or melon baller, scoop out a shallow indent in the center – just enough for your creamy filling!
  • 2. Whip Up the Cream: In a medium-sized mixing bowl, use an electric mixer to beat the heavy whipping cream until it forms stiff, fluffy peaks. Once done, set this aside gently.
  • 3. Create the Cheesecake Filling: In a separate mixing bowl, combine the softened cream cheese, sour cream, low-carb sweetener, vanilla extract, and the optional lemon juice. Mix with your electric mixer until the mixture is completely smooth and wonderfully creamy.
  • 4. Combine for Cloud-Like Goodness: Gently fold the prepared whipped cream into the cream cheese mixture until it's perfectly blended and airy. Be careful not to overmix!
  • 5. Fill and Decorate: Spoon your creamy filling into a piping bag fitted with a star tip (or simply snip the corner off a Ziploc bag). Neatly pipe a generous dollop of the delicious filling onto each prepped strawberry half.
