Ingredients
  

  • 3 large eggs
  • 2 tablespoons refined coconut oil
  • 1/2 cup diced vegetables such as spinach, tomatoes, or broccoli
  • 1/2 cup cooked meat like crumbled bacon, diced ham, or sausage
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Lightly mist your egg bite mold or a regular muffin pan with non-stick cooking spray. Divide your cooked meat and diced vegetables evenly among the cavities.
  • In a blender, combine the eggs, coconut oil, salt, and pepper. Blend until the mixture is completely smooth and creamy.
  • Carefully pour the smooth egg mixture over the fillings in each mold, filling them almost to the top.
  • Preheat your air fryer to 400°F (200°C). Place the filled mold inside and cook for 10-12 minutes, or until the egg bites are set and reach an internal temperature of 165-185°F.
  • Preheat your oven to 350°F (175°C). Place the filled mold in the oven and bake for 20-25 minutes, or until they are cooked through and register an internal temperature of 165-185°F.
  • Let the egg bites cool in the mold for about 5 minutes before gently popping them out. Serve warm for a quick and healthy breakfast!
