Instructions
Lightly mist your egg bite mold or a regular muffin pan with non-stick cooking spray. Divide your cooked meat and diced vegetables evenly among the cavities.
In a blender, combine the eggs, coconut oil, salt, and pepper. Blend until the mixture is completely smooth and creamy.
Carefully pour the smooth egg mixture over the fillings in each mold, filling them almost to the top.
Preheat your air fryer to 400°F (200°C). Place the filled mold inside and cook for 10-12 minutes, or until the egg bites are set and reach an internal temperature of 165-185°F.
Preheat your oven to 350°F (175°C). Place the filled mold in the oven and bake for 20-25 minutes, or until they are cooked through and register an internal temperature of 165-185°F.
Let the egg bites cool in the mold for about 5 minutes before gently popping them out. Serve warm for a quick and healthy breakfast!
