  • 0.68 cup butter (salted or unsalted) browned and cooled
  • 0.5 cup sesame tahini well-stirred
  • 0.5 cup granulated sugar
  • 1 cup light brown sugar well-packed
  • 2 large eggs
  • 2 tsp vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour spooned and leveled
  • 1 tsp baking soda
  • 0.5 tsp sea salt plus extra flaky for topping

  • 2 cups dark chocolate chips
  • 0.75 cup shelled pistachios roughly chopped

Instructions
 

  • Toast the nuts: If using raw pistachios, preheat your oven to 350°F and toast them on a baking sheet for 8 minutes to bring out their rich, nutty flavor. Let them cool completely.
  • Brown the butter: Melt the butter in a pan until it turns a beautiful amber color and smells toasted. Pour it into a dish and let it cool until it solidifies back to room temperature.
  • Whip the wet ingredients: In a mixing bowl, beat the cooled brown butter, tahini, granulated sugar, brown sugar, eggs, and vanilla for 2 to 3 minutes until the mixture is light, creamy, and fluffy.
  • Combine dry ingredients: Whisk the flour, baking soda, and sea salt together in a separate bowl. Gradually fold this dry mix into the wet ingredients, stirring gently just until combined.
  • Add the mix-ins: Gently fold in the dark chocolate and chopped pistachios. For the absolute best texture and flavor, cover the dough and let it chill in the fridge for 1 to 24 hours.
  • Bake: Preheat your oven to 375°F. Scoop out 1/4-cup portions of dough, shape them into balls, and place them on a lined baking sheet. Bake for 9 to 11 minutes.
  • Cool and garnish: Let the cookies rest on the baking sheet for 10 minutes before moving them to a cooling rack. Sprinkle with a touch of flaky sea salt for a perfect sweet-and-salty finish!
