Ingredients
  

  • 1 cup almond butter can use other nut butters
  • 1/4 cup brown sugar replacement like an erythritol blend
  • 2 tablespoons allulose
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup chocolate protein powder whey, egg white, or plant-based
  • 1 tablespoon cocoa powder Dutch process for deeper flavor
  • 1 tablespoon grass-fed gelatin or 2 tablespoons collagen powder
  • 1/2 teaspoon espresso powder optional, enhances chocolate flavor
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Water as needed (slightly warm)
  • 3 ounces sugar-free chocolate chips

Instructions
 

  • Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper or a silicone mat.
  • In a big bowl, use an electric mixer to combine the almond butter, brown sugar replacement, allulose, eggs, and vanilla extract until everything is smooth and well-blended.
  • Now, add the protein powder, cocoa powder, gelatin (or collagen), optional espresso powder, baking soda, and salt. Beat until a thick, uniform dough forms. If it's too stiff to mix, add a tablespoon of warm water at a time until it's just right – firm but workable.
  • Gently stir in the sugar-free chocolate chips until evenly distributed throughout the dough.
  • Divide the dough into 12 equal portions and roll them into balls, about 2 inches each. Place them on your prepared baking sheet and gently press each ball down to about 1 inch thick.
  • Bake for 8 to 10 minutes. Look for cookies that are puffed and firm around the edges but still delightfully soft in the center. Avoid overbaking to keep them fudgy!
  • Let your delicious cookies cool completely on the baking sheet. Then, dig in!
