Ingredients
  

For the Crust

  • 25 Keto-friendly chocolate sandwich cookies
  • 1/3 cup melted butter or a bit more if needed

For the Nutella Filling

  • 1 cup homemade sugar-free chocolate hazelnut spread
  • 8 ounces mascarpone cheese softened
  • 1/3 cup powdered monk fruit or allulose sweetener
  • 2 tablespoons heavy cream
  • 1 teaspoon unflavored grass-fed gelatin
  • 1 teaspoon vanilla extract

For the Ganache Topping

  • 1 cup sugar-free chocolate chips
  • 2/3 cup heavy cream
  • 1/4 cup toasted and chopped hazelnuts Optional, for topping

Instructions
 

  • To Make the Healthy Chocolate Cookie Crust:

  • Break the keto chocolate cookies into pieces and toss them into your food processor. Pulse until they transform into fine crumbs, creating a perfect base for our healthy tart.
  • Pour in the melted butter and pulse again until the mixture looks like moist sand. Press this delicious crumb mixture evenly into your 9-inch tart pan (ensure the bottom is lined with parchment paper), making sure to go up the sides. Set it aside while you prepare the creamy, nutritious filling.
  • To Make the Luscious Nutella Filling:

  • In a small bowl, sprinkle the gelatin over the heavy cream. Let it sit for a few minutes until it thickens and solidifies – this is called blooming, and it's key for a perfectly set filling!
  • In a mixing bowl, combine the sugar-free chocolate hazelnut spread, softened mascarpone cheese, powdered sweetener, vanilla extract, and your bloomed gelatin mixture. These wholesome ingredients come together beautifully.
  • Using a hand mixer, blend everything until it's wonderfully smooth and fully combined, ensuring a velvety texture.
  • Pour this luscious, guilt-free filling over your prepared crust in the tart pan and gently smooth the top with an offset spatula.
  • To Make the Rich Ganache Topping:

  • Warm the heavy cream in a microwave-safe bowl for about 30 seconds until it's hot.
  • Add the sugar-free chocolate chips to the hot cream. Let it sit for a few minutes, then whisk until it's completely smooth and glossy. It should be pourable, and will thicken as it chills.
  • Carefully pour the rich ganache over the tart filling, spreading it out evenly for a beautiful finish.
  • If you're using hazelnuts, quickly toast them in a skillet for extra flavor, then roughly chop. Sprinkle them over the ganache before it sets, gently pressing them down to ensure they stick.
  • Place your beautiful, healthy tart in the fridge to chill for at least 4-6 hours, or ideally overnight, until it's perfectly set and ready to enjoy!

Notes
