Instructions
Preheat your oven to 350°F (180°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy lifting.
In a large bowl, whisk together the almond flour and baking powder until well combined. Set this aside.
In a separate bowl, whisk together the softened butter, golden monk fruit sweetener, eggs (or egg substitute), and vanilla extract until everything is smoothly blended.
Pour the wet mixture into the dry ingredients. Mix gently with a spatula until just combined – try not to overmix!
Stir in your keto chocolate chips and any other mix-ins you love.
Spread the batter evenly into your prepared baking pan. Bake for 20-25 minutes, or until a skewer inserted into the center comes out "just clean" (a few moist crumbs are okay to ensure gooey blondies!).
Let the blondies cool completely in the pan on a wire rack before lifting them out and slicing. This helps them firm up and keeps them perfectly soft and chewy.
