Ingredients
  

  • 2 cups blanched almond flour
  • 1 teaspoon baking powder
  • 1 cup golden monk fruit sweetener
  • 2 large eggs (or plant-based egg substitute like Bob's Egg Replacer)
  • 1/2 cup butter (or dairy-free butter), softened
  • 1 teaspoon vanilla extract
  • 1/2 cup keto-friendly chocolate chips
  • 1/2 cup optional mix-ins (like chopped nuts, seeds, or extra chocolate chunks)

Instructions
 

  • Preheat your oven to 350°F (180°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy lifting.
  • In a large bowl, whisk together the almond flour and baking powder until well combined. Set this aside.
  • In a separate bowl, whisk together the softened butter, golden monk fruit sweetener, eggs (or egg substitute), and vanilla extract until everything is smoothly blended.
  • Pour the wet mixture into the dry ingredients. Mix gently with a spatula until just combined – try not to overmix!
  • Stir in your keto chocolate chips and any other mix-ins you love.
  • Spread the batter evenly into your prepared baking pan. Bake for 20-25 minutes, or until a skewer inserted into the center comes out "just clean" (a few moist crumbs are okay to ensure gooey blondies!).
  • Let the blondies cool completely in the pan on a wire rack before lifting them out and slicing. This helps them firm up and keeps them perfectly soft and chewy.
