Deviled Egg Christmas Trees 🎄

A festive and healthy appetizer perfect for holiday gatherings, these deviled eggs are transformed into charming Christmas trees. Hard-boiled egg whites are filled with a creamy, spinach-infused yolk mixture, then artfully decorated with minced chili pepper 'ornaments', a yellow bell pepper 'star', and a dusting of Parmesan 'snow'.

Ingredients
  

  • 7 large eggs
  • 2 tablespoons butter
  • 2 cloves garlic thinly sliced
  • 5 ounces baby spinach
  • 1/3 cup mayonnaise
  • 1 tablespoon mustard
  • Juice from 1/2 lemon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon hot sauce
  • 2 tablespoons dehydrated potato flakes
  • 1 red Fresno chili pepper minced
  • 1 yellow bell pepper cut into small stars
  • Parmesan cheese

Instructions
 

  • Gently place eggs into boiling water and cook for 9 and a half minutes. Immediately transfer them to an ice bath to cool completely, which helps with easy peeling.
  • Once cool, peel the eggs and rinse them. Carefully slice each egg in half crosswise (the "short way") to create a round base, gently scooping out the yolks into a separate bowl. Lightly trim a tiny bit off the bottom of each egg white so they stand upright on your serving dish, being careful not to cut through the cavity. Store whites and yolks in the fridge.
  • While eggs cool, melt butter in a frying pan over medium heat. Add the sliced garlic and stir until fragrant. Stir in the baby spinach and cook for about 5 minutes until it's fully wilted and any moisture has evaporated. Let this mixture cool down completely.
  • Combine the cooled spinach mixture, egg yolks, mayonnaise, mustard, lemon juice, smoked paprika, hot sauce, and potato flakes in a blender. Blend until smooth and creamy. Chill the filling thoroughly in the fridge. If it needs to be thicker to stand tall, stir in a tiny bit more potato flakes.
  • Spoon the chilled filling into a piping bag fitted with a star tip. Arrange the egg whites on a platter. Pipe the green filling into each egg white, gently moving the tip up and down as you pipe to create a tree-like shape, making them as tall as you like.
  • Use two toothpicks to carefully place 5-6 tiny pieces of minced red Fresno pepper on each "tree" as colorful ornaments. Gently place a small yellow bell pepper star on top of each one.
  • Just before serving, use a microplane grater to sprinkle Parmesan cheese over your deviled egg Christmas trees, creating a festive "snow" effect. Serve immediately and enjoy!
