Ingredients
  

  • 2 pounds Russet or Yukon Gold potatoes
  • 1/4 cup unsalted butter divided
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese (optional, for a cheesy touch)
  • 1 teaspoon salt (plus more for serving)
  • 1/2 teaspoon black pepper
  • 3 large egg yolks
  • Fresh chopped chives or parsley for garnish
  • 1 tablespoon sea salt for garnish

Instructions
 

  • Prepare Potatoes: Peel and chop your potatoes. Place them in a large pot, cover with cold, salted water, and bring to a boil. Cook for 15-20 minutes until they are fork-tender.
  • Preheat & Prep: While potatoes cook, preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Warm Ingredients: Melt a portion of the butter (2 tablespoons for mashing, reserving the rest for brushing) in a small bowl and warm the heavy cream in another, using a microwave or stovetop.
  • Mash & Mix: Drain the cooked potatoes completely. Return them to the pot over low heat for a minute to remove any extra moisture. Mash them until super smooth. Stir in the 2 tablespoons of melted butter, warm cream, Parmesan cheese (if using), salt, pepper, and the egg yolks until everything is perfectly combined and creamy.
  • Pipe the Swirls: Transfer your potato mixture into a piping bag fitted with a large star tip. Carefully pipe small, elegant mounds or rosettes onto your prepared baking sheet, leaving a little space between each.
  • Bake to Golden: Brush the piped potato mounds with the remaining melted butter. Bake for 15-20 minutes, or until they turn beautifully golden brown and slightly crispy on the edges.
  • Garnish & Serve: Remove from the oven, sprinkle with fresh chopped chives or parsley and a pinch of sea salt. Serve these delightful Duchess Potatoes immediately and enjoy!
