Preheat your oven to 350°F. Spray a 13x9-inch glass baking dish with cooking spray. In a skillet, cook the ground beef, onions, salt, and pepper over medium-high heat for 5 to 7 minutes until browned; drain excess fat. Add the tomato sauce and water, bringing it to a boil, then reduce heat and simmer uncovered for 10 minutes.
In a medium bowl, whisk the egg and mix in the ricotta cheese, Swiss cheese, parsley, and 1/4 cup of crumbled bacon.
Spread about 1 cup of the beef mixture in the baking dish. Layer with 4 uncooked noodles, half of the ricotta mixture, 2 cups of beef mixture, and 3/4 cup of Cheddar cheese. Repeat the layers, starting with 4 noodles. Finish with the remaining noodles, beef mixture, Cheddar cheese, and bacon. Cover with foil (sprayed side down) and refrigerate for at least 2 hours, up to 24 hours.
Bake covered for 45 minutes, then uncover and bake for an additional 30 minutes until bubbly and golden brown. Let it stand for 10 minutes before slicing.
