These delightful no-bake birds' nest cookies are perfect for Easter or any time you need a fun, easy treat. Made with melted chocolate and crispy chow mein noodles, topped with colorful candy eggs.

Ingredients
  

  • 10 ounces good quality melting chocolate (like dark chocolate wafers or candy melts for easy melting)
  • 2 cups crispy chow mein noodles (approximately 134 grams)
  • 30-45 small candy eggs (such as Cadbury Mini Eggs, jelly beans, or M&M's)

Instructions
 

  • Line a standard baking sheet with parchment paper or wax paper. This will prevent sticking and make cleanup a breeze!
  • Place your melting chocolate into a microwave-safe bowl. Heat it in short 30-second bursts at 50% power, stirring well after each interval, until the chocolate is completely smooth and creamy.
  • Gently fold the crispy chow mein noodles into the melted chocolate using a spatula. Make sure all the noodles are nicely coated, resembling little "twigs."
  • Scoop generous spoonfuls of the chocolate-noodle mixture onto your prepared baking sheet. Use the back of the spoon or your finger to create a small indentation in the center of each "nest."
  • Immediately place 3 to 4 candy eggs into the divot of each nest before the chocolate sets.
  • Pop the baking sheet into the refrigerator for at least 15 minutes (or up to an hour) until the chocolate is firm and the nests are set.

Notes

Once firm, store your delightful birds' nest cookies in an airtight container in the refrigerator for up to two weeks.
