These delightful Easy Blue Christmas Truffles are a perfect no-bake treat for the holidays, featuring smooth white chocolate ganache flavored with blue curacao and coated in sparkling sanding sugar.

Ingredients
  

  • 2 cups high-quality white chocolate chips
  • 2 tablespoons heavy whipping cream
  • 2 tablespoons blue curacao liqueur or extra heavy cream for an alcohol-free option
  • 1/2 cup sparkling sanding sugar

Instructions
 

  • Combine your white chocolate chips and heavy whipping cream in a microwave-safe bowl. Heat in 30-second intervals on medium power, stirring thoroughly after each, until the mixture is completely smooth and creamy.
  • Once your chocolate mixture is velvety smooth, stir in the blue curacao until it's fully incorporated and the ganache takes on a beautiful blue hue.
  • Cover the bowl and place it in the refrigerator for about 2 hours. This will allow the mixture to firm up enough for easy rolling.
  • While the mixture chills, line a baking sheet with parchment paper. Pour the sanding sugar into a shallow bowl, ready for coating your truffles.
  • Once firm, scoop out heaping teaspoons of the chilled mixture. Roll each portion between your palms to form smooth balls, then gently roll them in the sanding sugar until evenly coated and sparkling.
  • Place the sugar-coated truffles on your prepared baking sheet. Refrigerate for another 1 hour to let them set completely.

Notes

Store any leftovers in an airtight container in the fridge, and for the best texture, let them sit at room temperature for about 5 minutes before enjoying!
