Pie Filling

  • 1/4 cup boiling water
  • 0.3 oz sugar-free lime gelatin mix (small box)
  • 2 teaspoons key lime juice (freshly squeezed or bottled)
  • 12 oz light key lime pie flavored yogurt
  • 8 oz light whipped topping (like COOL WHIP), plus extra for serving
  • Green food coloring (optional)

Crust & Garnish

  • 1 (9-inch) prepared graham cracker crust
  • 1 fresh lime for garnish (optional)

Instructions
 

  • In a medium bowl, carefully whisk the sugar-free lime gelatin into the boiling water until it's completely dissolved.
  • Stir in the key lime juice. Let this mixture cool down for a few minutes.
  • Once the gelatin mixture has cooled slightly, gently fold in the light key lime pie flavored yogurt. Then, add the 8 oz container of light whipped topping and, if you desire a brighter green color, a few drops of green food coloring. Mix until everything is well combined and smooth.
  • Spoon this creamy lime mixture into the prepared graham cracker crust. Use the back of the spoon or a spatula to smooth out the top evenly.
  • Place the pie in the refrigerator for at least 2 hours, or until it's completely set and firm. For best results, chill overnight.
  • While the pie chills, you can make lime curls for garnish. Slice a thin piece from a fresh lime, then carefully cut off just the green peel part. Twist this peel around a pencil or your finger and let it hold its curl while the pie sets.
  • Once the pie is firm, cut it into slices. Top each slice with an extra dollop of light whipped topping and a delicate lime curl, if desired. Enjoy this refreshing summer treat!
