Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 2 large egg whites
  • 1.5 cups almond flour
  • 0.5 cup unflavored whey protein powder (or egg white protein powder)
  • 2 teaspoons baking powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup almond milk (or water)
  • 6 slices cooked and chopped bacon
  • 0.5 cup chopped roasted red peppers
  • 1 cup grated cheddar cheese (divided)

Instructions
 

  • Get ready by preheating your oven to 350°F (175°C). Line a standard muffin tin with parchment paper or silicone liners – this makes cleanup a breeze!
  • In a big bowl, whisk together the cottage cheese, whole eggs, and egg whites until everything looks smoothly combined.
  • Now, add the almond flour, protein powder, baking powder, garlic powder, salt, and pepper. Stir gently until they're just mixed in. Then, pour in the almond milk and give it another quick stir.
  • Time for the good stuff! Fold in the chopped bacon, roasted red peppers, and half of your grated cheddar cheese. Make sure they're spread evenly throughout the batter.
  • Spoon this delicious mixture into your prepared muffin cups. Don't forget to sprinkle the remaining cheddar cheese on top of each one for that extra golden crust!
  • Bake for 20 to 25 minutes. You'll know they're ready when they're beautifully golden brown and feel firm to the touch. Let them cool completely in the pan before serving – they'll firm up even more!
