Ingredients
  

  • 1 head Cauliflower (about 4 cups of florets), cut into small pieces
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper
  • 1 cup Shredded Cheddar cheese (sharp cheddar recommended for best flavor)
  • 0.25 cup Heavy cream
  • 0.25 cup Unsweetened almond milk (or your preferred milk)
  • 1 tablespoon Unsalted butter

Instructions
 

  • Get your oven ready: Preheat it to a hot 450°F (232°C). Line a baking sheet with parchment paper or foil for a quick cleanup.
  • Season the cauliflower: In a large bowl, gently toss your small cauliflower florets with the olive oil, sea salt, and black pepper until they're all nicely coated.
  • Roast to golden perfection: Spread the seasoned cauliflower evenly on your prepared baking sheet. Pop it into the oven and roast for about 15-20 minutes, or until the cauliflower is tender and has lovely browned edges, bringing out its natural sweetness.
  • Craft the creamy cheese sauce: While the cauliflower is roasting, combine the shredded cheddar cheese, heavy cream, unsweetened almond milk, and unsalted butter in a small saucepan. Heat this mixture gently over low heat, stirring constantly, until all the cheese has melted into a smooth, luscious sauce.
  • Combine and enjoy: Once the roasted cauliflower is ready, transfer it back into a large bowl. Pour the warm, velvety cheese sauce over the cauliflower and gently fold to ensure every piece is covered in that delicious cheesy goodness. Serve immediately for a healthy and satisfying meal!
