Ingredients
  

  • 1 medium head fresh cauliflower
  • 4 tablespoons olive oil
  • 1 clove garlic finely minced
  • 0.5 teaspoon Italian seasoning blend
  • 0.125 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 cup low-carb pasta sauce plus extra for serving if you like!
  • 1 cup shredded mozzarella cheese
  • 3 tablespoons grated Parmesan cheese
  • Fresh herbs like parsley or basil, for a pretty garnish (optional)

Instructions
 

  • Get your oven ready by preheating it to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.
  • Carefully cut the cauliflower in half from top to bottom, then chop it into large, bite-sized florets.
  • In a large zip-top bag, combine the cauliflower florets with the olive oil, minced garlic, Italian seasoning, salt, and pepper. Seal the bag and gently toss everything together until the cauliflower is nicely coated.
  • Spread the seasoned cauliflower florets in a single layer on your prepared baking sheet. Bake for 20 minutes, remembering to flip them over after about 15 minutes for even cooking.
  • Remove the cauliflower from the oven. Spoon about 2 tablespoons of pasta sauce over each floret, then sprinkle generously with mozzarella cheese and a little Parmesan cheese.
  • Pop the baking sheet back into the oven for an additional 5-10 minutes, or until the cheese is wonderfully bubbly and melted, and the cauliflower is tender-crisp.
  • If you're feeling fancy, garnish with fresh herbs like parsley or basil before serving. Enjoy your healthy and delicious meal!
