Ingredients
  

For the Rolls

  • 8 ounces grated cheddar or mozzarella cheese
  • 2 tablespoons unsalted butter
  • 0.5 cup coconut flour
  • 0.25 cup unflavored whey or egg white protein powder
  • 4 teaspoons baking powder
  • 1 teaspoon garlic powder
  • 0.25 teaspoon salt (optional, as cheese and baking powder add some)
  • 2 large eggs
  • 1 large egg white

For the Garlic Butter

  • 2 tablespoons melted unsalted butter
  • 2 fresh garlic minced
  • 1 tablespoon fresh parsley finely chopped
  • 0.5 teaspoon coarse salt (optional, to taste)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8-inch round baking pan with parchment paper to prevent sticking.
  • In a large microwave-safe bowl, combine the grated cheese and 2 tablespoons of butter. Microwave on high in 30-second bursts, stirring in between, until the mixture is melty and smooth (this usually takes about 1.5 minutes).
  • Quickly add the coconut flour, protein powder, baking powder, garlic powder, and the optional 1/4 teaspoon salt to the melted cheese mixture. Stir in the eggs and the extra egg white. Use a rubber spatula to vigorously mix and "knead" the ingredients together in the bowl until you have a uniform dough. It will be sticky!
  • Lightly oil your hands to keep the dough from sticking. Divide the dough into 8 equal portions. Roll each portion into a smooth ball and arrange them in your prepared baking pan.
  • In a small bowl, whisk together the 2 tablespoons of melted butter, minced garlic, chopped parsley, and the optional 1/2 teaspoon coarse salt for the garlic topping. Brush about half of this delicious mixture generously over the dough balls in the pan.
  • Pop the pan into your preheated oven and bake for 20 to 25 minutes. You'll know they're ready when they're puffed up, beautifully golden brown, and feel firm to the touch.
  • Remove the pan from the oven and let the rolls cool in the pan for about 15 minutes. This makes them easier to handle. Once slightly cooled, gently separate them and brush with the remaining garlic butter. Serve these warm, buttery rolls and enjoy!
