Ingredients
  

  • 3 large eggs
  • 6 tablespoons cottage cheese divided
  • 1/4 cup diced lean ham optional, for extra flavor
  • 1/4 cup shredded cheddar cheese optional, for cheesiness
  • 1/8 tsp salt
  • 1/16 tsp black pepper

Instructions
 

  • Get started by blending the eggs, 2 tablespoons of cottage cheese, salt, and pepper until wonderfully smooth. Don't worry if it looks a bit frothy – that's perfectly normal!
  • Heat up a 9-inch frying pan over medium heat and give it a quick spray with nonstick cooking spray for a healthy, easy release.
  • Pour your smooth egg mixture into the warm pan and let it cook gently for about 5-6 minutes, or until the edges are set and the center is mostly firm.
  • While the omelet is cooking, gently mix the remaining 4 tablespoons of cottage cheese with your optional diced ham and cheddar cheese. Once the omelet is nearly set, spoon this delicious filling onto one half of the omelet.
  • Using a spatula, carefully fold the empty half of the omelet over the filling to create a perfect half-moon shape. Slide it onto a plate and serve immediately for a fresh and satisfying meal!
