- 1 tablespoon avocado oil or olive oil
- 1 onion small, diced
- 4 cloves garlic minced
- 1 pound lean ground beef
- 1 packet taco seasoning mix
- 10 ounces diced tomatoes with green chiles (mild Rotel is a great choice!)
- 2 cups shredded Mexican blend cheese (or Colby Jack)
Preheat your oven to 400°F (200°C). In a large skillet, heat the oil over medium heat.
Add the diced onion and minced garlic to the hot skillet. Cook for about 5-8 minutes until the onion becomes soft and clear.
Add the lean ground beef to the pan. Cook, breaking it up with a spoon, until it's fully browned (this takes about 8 minutes). For a healthier option, drain off any excess fat.
Stir in the taco seasoning and ¼ cup of water with the ground beef. Let it simmer briefly to meld the flavors.
Transfer the seasoned beef mixture into a casserole or baking dish. Stir in the diced tomatoes with green chiles and 1 cup of the shredded cheese.
Evenly sprinkle the remaining 1 cup of shredded cheese over the top of the casserole.
Bake in the preheated oven for 20 minutes, or until the cheese is wonderfully melted and turns a golden brown.
Let it cool for a few minutes before serving. This casserole is fantastic on its own or with fresh toppings like avocado slices or a dollop of plain Greek yogurt for extra protein!
