Ingredients
  

  • 6 cups fresh cauliflower florets from one large head, trimmed and cut into small florets
  • 2 tbsp unsalted butter melted (or olive oil for a lighter option)
  • 0.5 tsp sea salt (plus more to taste)
  • 0.25 tsp black pepper (plus more to taste)
  • 0.67 cup full-fat sour cream (or plain Greek yogurt for a healthier swap)
  • 0.25 cup heavy cream
  • 2 fresh garlic minced
  • 1.5 cups shredded sharp cheddar cheese divided
  • 6 tbsp cooked bacon crumbled (for that classic loaded flavor!), divided
  • 0.25 cup chopped green onions divided

Instructions
 

  • Preheat your oven to a hot 450°F (232°C). In a large bowl, gently toss the cauliflower florets with the melted butter (or oil), sea salt, and black pepper.
  • Spread the seasoned cauliflower in a single layer in a small 1.5 quart casserole dish. Pop it into the preheated oven and roast for about 25-30 minutes, or until it's beautifully tender and slightly browned. Give it a stir halfway through for even cooking.
  • While the cauliflower roasts, use the same bowl (a quick wipe is fine!) to whisk together the sour cream and heavy cream until smooth. Stir in the minced garlic, half of the shredded cheddar, half of the crumbled bacon, and half of the chopped green onions. Taste and add a pinch more salt and pepper if you like, but remember the cheese will add flavor!
  • Once the cauliflower is tender, remove it from the oven (keeping the oven on). Add the roasted cauliflower to your creamy sauce mixture and gently stir to coat every floret. Pour this delicious blend back into your casserole dish.
  • Sprinkle the remaining cheddar cheese and bacon evenly over the top. Bake for another 5-10 minutes, just until the cheese is wonderfully melted and bubbly.
  • For a fresh finish, sprinkle with the rest of the green onions. Serve hot and enjoy this wholesome, satisfying dish!
