Ingredients
  

  • 1 pound lean ground beef
  • 0.5 medium onion diced
  • 1 green bell pepper diced
  • 20 slices turkey pepperoni quartered
  • 14 ounce pizza sauce jar
  • 0.5 cup water
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried oregano
  • 6 whole wheat buns or rolls for serving
  • 1 cup shredded light mozzarella cheese for serving

Instructions
 

  • Brown the Beef & Onion: In your Instant Pot, select the "Sauté" function. Add the lean ground beef and diced onion. Cook, breaking up the beef, until it's nicely browned and the onion is softened. Drain any excess fat for a healthier meal.
  • Stir in Flavor: Turn off the "Sauté" function. Add the diced bell pepper, quartered turkey pepperoni, pizza sauce, water, garlic powder, and oregano to the pot. Stir everything gently to combine well.
  • Pressure Cook: Secure the lid on your Instant Pot and set the valve to the "Sealing" position. Select "Manual" or "Pressure Cook" (High Pressure) and set the cook time for just 2 minutes.
  • Release & Serve: Once cooking is complete, allow a natural pressure release for 5 minutes, then perform a quick release of any remaining pressure. Carefully remove the lid. If the sauce seems a bit too thin for your liking, you can use the "Sauté" function again for a couple of minutes to simmer and thicken it slightly.
  • Assemble Your Joes: Spoon the delicious pizza sloppy joe mixture onto your whole wheat buns or rolls. Top each serving with a sprinkle of light mozzarella cheese and let it melt slightly from the warmth of the filling. Enjoy your quick and healthy meal!
