Ingredients
  

  • 12 ounces bulk breakfast sausage (or Italian sausage)
  • 5 large eggs
  • 3/4 cup cottage cheese
  • 2 cloves garlic minced
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 6 ounces shredded cheddar cheese divided

Instructions
 

  • Preheat your oven to 325°F (160°C). Lightly grease 40 mini muffin cups (silicone ones work best!) and set them on a baking sheet for easy handling.
  • In a large skillet, cook the sausage until it's fully browned, breaking it into small pieces as it cooks, about 6 minutes.
  • Grab a blender and add the eggs, cottage cheese, minced garlic, salt, and pepper. Blend until everything is super smooth – no lumps!
  • Once blended, gently stir in the cooked sausage and about two-thirds of the shredded cheese (about 4 ounces).
  • Carefully spoon this yummy mixture into your greased mini muffin cups. Top each one with a little sprinkle of the leftover cheese.
  • Pop them into the preheated oven and bake for 15 to 20 minutes. They're ready when they look puffed up and golden brown.
