Equipment

  • 12-inch pizza pan
  • Mixing Bowls

Ingredients

For the light crust

  • 1 cup warm water 105°-110°F
  • 2 tbsp granulated sugar
  • 1 tsp active dry yeast
  • 1/3 cup vegetable oil divided
  • 2 1/2 cups all-purpose flour
  • 1 tsp kosher salt

For the fruit layer

  • 3 tbsp unsalted butter melted
  • 3 tbsp granulated sugar
  • 21 ounces cherry pie filling 1 can

For the easy crumble

  • 1 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 6 tbsp light brown sugar
  • 1/2 tsp kosher salt
  • 1/2 cup unsalted butter melted and cooled

For the light glaze

  • 1 cup confectioners' sugar
  • 1 tbsp milk
  • 1/4 tsp sweet almond extract

Instructions

  • Wake up the yeast: In a large mixing bowl, gently stir the warm water, sugar, and yeast together. Let it rest for 5 minutes until it becomes nice and frothy.
  • Mix the dough: Pour in half of your oil, then stir in the flour and salt. Mix until a soft, smooth dough starts to pull together.
  • Let it proof: Place your dough in a lightly greased bowl, cover it, and let it rise in a warm spot for about 1 hour until beautifully doubled in size.
  • Prep and pre-bake: Heat your oven to 450°F. Line a 12-inch pizza pan with parchment paper and spread the remaining oil over the bottom. Press the risen dough evenly onto the pan, using your fingers to press light dimples into the surface. Bake for 10 minutes until lightly golden.
  • Layer the fruit: Mix the 3 tablespoons of melted butter and sugar, then brush it evenly over your warm crust. Spread the antioxidant-rich cherry filling in an even layer over the top.
  • Create the crumble: In a separate bowl, toss the flour, sugars, salt, and cooled melted butter together until a rustic, clumpy mixture forms. Scatter this crumble evenly over the sweet cherries.
  • Final bake: Bake for another 13-15 minutes until the crumble is wonderfully golden and crisp.
  • Drizzle and serve: Whisk the confectioners' sugar, milk, and almond extract together until smooth. Drizzle this glaze over the warm dessert pizza. Let it cool for 5-10 minutes, slice, and enjoy!
