  • 1/3 cup granulated sweetener like erythritol blend
  • 2 oz cream cheese softened

  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1 tsp baking soda
  • pinch of salt
  • 2/3 cup sugar-free chocolate chips

  • Cream the Base: In a large mixing bowl, use an electric mixer to combine the softened butter and granulated sweetener. Beat them together until the mixture is light and fluffy.
  • Add Wet Goodness: Now, mix in the softened cream cheese, the egg, and the vanilla extract. Keep mixing until everything is well incorporated. Don't worry if there are a few tiny lumps from the cream cheese; they'll smooth out.
  • Combine Dry: Gently add the almond flour, baking soda, and salt to the bowl. Mix on a low speed or by hand just until the dry ingredients are fully combined with the wet – be careful not to overmix!
  • Fold in Chocolate: Stir in the sugar-free chocolate chips. You'll notice the dough is quite thick, which is exactly right for these delicious bars.
