Easy Chicken Hash Brown Casserole

Ingredients
  

  • 2 cans cream of chicken soup (10.5 ounce) undiluted or 2 cups homemade
  • 1 cup sour cream (light sour cream can be used for a healthier twist!)
  • 0.5 cup milk
  • salt and black pepper to taste
  • 1 package frozen shredded hash browns (26 ounce)
  • 2 cups diced or shredded cooked chicken (like rotisserie chicken for ease)
  • 2 cups shredded cheddar cheese divided
  • 1 bag frozen mixed vegetables (12 ounce)
  • 1 sleeve Ritz crackers, crushed (or whole wheat crackers for a healthier option)

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with nonstick cooking spray.
  • In a large mixing bowl, combine the cream of chicken soup, sour cream, and milk. Stir until smooth. Season lightly with salt and a dash of black pepper.
  • Gently fold in the frozen hash browns, cooked chicken, 1 cup of the shredded cheddar cheese, and the frozen mixed vegetables. Mix gently until everything is well combined and coated.
  • Pour the wholesome mixture into your prepared baking dish, spreading it evenly.
  • Sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the casserole, followed by the crushed crackers for a lovely golden crunch.
  • Bake in the preheated oven for about 1 hour, or until the cheese is beautifully melted, the crackers are golden brown, and the casserole is bubbly and heated through.
  • Let it cool for about 10 minutes before serving. This allows it to set nicely for easy scooping!
