Ingredients
  

Cookies

  • 1 2/3 cups cake flour (or all-purpose flour)
  • 0.5 cup white sugar
  • salt Pinch
  • 10 Tablespoons unsalted butter (½ cup plus 2 Tablespoons, softened at room temperature)
  • 1 large egg
  • 0.5 teaspoon vanilla extract

Ganache

  • 4 oz bittersweet chocolate bar
  • 0.5 cup heavy cream

Decorations

  • Christmas sprinkles
  • Red and green cookie icing (optional, for decorating)

Instructions
 

  • Preheat & Prep: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper – this will prevent sticking and make clean-up super easy!
  • Whip the Butter Mix: In a big bowl, use a hand mixer or whisk to cream together the softened butter, sugar, and salt until the mixture is light, fluffy, and the sugar granules have mostly dissolved. This usually takes about 3 minutes.
  • Add the Flavor: Beat in the egg and vanilla extract until they are fully combined into the butter mixture, about 1 minute.
  • Gently Fold in Flour: Sift the cake flour directly into the bowl in three parts, mixing gently after each addition until just combined. Be careful not to overmix the dough, as this helps keep the cookies tender and delicate. The dough will be thick and a bit sticky.
  • Pipe Your Designs: Transfer the sticky dough into a pastry bag fitted with a large closed star tip. On your prepared baking sheet, pipe out fun 2-inch festive shapes like rosettes or straight lines. Try to make them similar in size so they bake evenly.
  • Bake to Golden: Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the edges of the cookies turn a beautiful golden brown.
  • Cool Completely: Let the cookies cool completely on the baking sheet. They need to be fully cool before you dip them in chocolate!
  • Make the Ganache: While the cookies cool, break the chocolate bar into small pieces and put them in a microwave-safe bowl with the heavy cream. Microwave in 20-second intervals, stirring well after each, until you have a smooth, silky chocolate ganache.
  • Decorate with Joy: Dip each cooled cookie into the warm ganache and lay it back on parchment paper. Quickly add your festive Christmas sprinkles before the chocolate sets. If you prefer, decorate with red and green cookie icing instead. Let the chocolate or icing harden completely before serving these delightful treats!
