Ingredients
  

Cookie Dough

  • 1 cup softened unsalted butter
  • 2 ounces softened cream cheese
  • 0.75 cup granulated sugar
  • 1 large egg at room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon fine sea salt

Sprinkles

  • 1 cup festive red and green jimmies sprinkles
  • 1 cup vibrant red and green nonpareils sprinkles
  • 1 cup sparkling red and green sugar sprinkles

Instructions
 

  • Combine the water, yeast and sugar in a bowl. Rest for 5 minutes.
  • In a large bowl, using an electric mixer, beat together the softened butter and cream cheese until they're perfectly smooth and creamy (about 2 minutes). Then, mix in the sugar, egg, vanilla extract, and almond extract for about a minute until well combined.
  • In a separate medium bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry flour mixture to the wet butter mixture. Mix until a soft, smooth dough forms. Cover the bowl with plastic wrap and pop it in the fridge to chill for at least one hour – this makes the dough much easier to handle!
  • Once chilled, preheat your oven to 350°F (175°C). Line your cookie sheets with parchment paper. Get your colorful sprinkles ready by pouring each type into its own small bowl.
  • Scoop out cookie dough, about two tablespoons per cookie, and gently roll it into a neat ball. Then, roll each dough ball generously in your chosen sprinkles until fully coated.
  • Place the sprinkle-covered dough balls onto your prepared cookie sheets, leaving about two inches between each one. Use the bottom of a glass or a measuring cup to gently flatten each ball into a disc about ¾ inch thick.
  • Bake for about 12 minutes, or until the edges of the cookies are just lightly golden brown. The tops will stay soft and light.
  • Let the warm cookies cool on the baking sheet for about five minutes to set up before moving them to a wire rack. Then, grab a glass of milk and enjoy your perfectly festive, easy-to-make Christmas cookies!
