Combine the water, yeast and sugar in a bowl. Rest for 5 minutes.
In a large bowl, using an electric mixer, beat together the softened butter and cream cheese until they're perfectly smooth and creamy (about 2 minutes). Then, mix in the sugar, egg, vanilla extract, and almond extract for about a minute until well combined.
In a separate medium bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry flour mixture to the wet butter mixture. Mix until a soft, smooth dough forms. Cover the bowl with plastic wrap and pop it in the fridge to chill for at least one hour – this makes the dough much easier to handle!
Once chilled, preheat your oven to 350°F (175°C). Line your cookie sheets with parchment paper. Get your colorful sprinkles ready by pouring each type into its own small bowl.
Scoop out cookie dough, about two tablespoons per cookie, and gently roll it into a neat ball. Then, roll each dough ball generously in your chosen sprinkles until fully coated.
Place the sprinkle-covered dough balls onto your prepared cookie sheets, leaving about two inches between each one. Use the bottom of a glass or a measuring cup to gently flatten each ball into a disc about ¾ inch thick.
Bake for about 12 minutes, or until the edges of the cookies are just lightly golden brown. The tops will stay soft and light.
Let the warm cookies cool on the baking sheet for about five minutes to set up before moving them to a wire rack. Then, grab a glass of milk and enjoy your perfectly festive, easy-to-make Christmas cookies!
