  • ½ cup Salted Butter melted and cooled
  • 1 large Egg at room temperature

  • ½ teaspoon Onion Powder
  • ¼ teaspoon Garlic Powder
  • 8 ounces Corn Muffin Mix (1 box) (like Jiffy's)
  • 15 ounces Creamed Corn
  • 15 ounces Whole Kernel Corn drained
  • 4 ounces Grated Pepper Jack Cheese
  • 3 Green Onions thinly sliced

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a 9-inch square or 2-quart baking dish. This helps prevent sticking!
  • In a large bowl, whisk together the sour cream, melted butter, egg, black pepper, onion powder, and garlic powder until everything is smoothly combined.
  • Gently fold in the corn muffin mix, creamed corn, drained whole kernel corn, grated cheese, and sliced green onions. Stir *just* until everything is mixed together – try not to overmix!
  • Pour this delicious mixture into your prepared baking dish and smooth the top evenly. Bake for about 45-55 minutes, or until the edges are beautifully golden brown and the center is set.
  • Let your casserole cool for about 10 minutes before serving. This allows it to set perfectly, ready for everyone to enjoy!
