Ingredients
  

  • 6 cups cooked shredded chicken (rotisserie chicken works great for a quick shortcut!)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 0.5 small onion thinly sliced
  • 1 clove garlic minced
  • 12 ounces fresh white mushrooms sliced
  • 4 ounces beef broth (or chicken broth)
  • 4 ounces cream cheese softened and cubed
  • 2 ounces heavy cream
  • 0.5 teaspoon salt (adjust to your preference)
  • 0.25 teaspoon black pepper (adjust to your preference)
  • 1 cup shredded mozzarella cheese

Instructions
 

  • Preheat your oven to a cozy 400°F (200°C). Lightly grease a 9x13 inch baking dish and gently spread the cooked shredded chicken evenly across the bottom.
  • In a large skillet, warm the butter and olive oil over medium heat until it's glistening.
  • Toss in the sliced onion and minced garlic. Sauté them for about 3-5 minutes until the onions become wonderfully soft and fragrant.
  • Stir in the sliced mushrooms and continue to cook until they are tender and have released their natural moisture, about 5-7 minutes.
  • Carefully spoon this aromatic onion, garlic, and mushroom mixture right over the chicken in your baking dish.
  • Using the same skillet (no need to wash it!), pour in the beef broth and add the softened, cubed cream cheese.
  • Stir in the heavy cream, salt, and pepper. Whisk continuously until the sauce transforms into a smooth and luscious cream. For an extra velvety texture, an immersion blender can be a real game-changer here!
  • Generously pour the creamy, dreamy sauce over the chicken and vegetables in the baking dish, making sure everything is beautifully coated.
  • Sprinkle the shredded mozzarella cheese evenly over the top, creating a lovely blanket.
  • Bake for 20-25 minutes, or until the casserole is delightfully bubbling around the edges and the cheese is melted and golden brown. Serve warm and savor every healthy, comforting bite!
