Ingredients
  

  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning blend
  • 1/4 cup water
  • 1 head romaine or iceberg lettuce chopped into bite-sized pieces
  • 1/2 cup sliced black olives
  • 1 can black beans 14-ounce, rinsed and drained
  • 1 cup cherry tomatoes sliced (or diced regular tomatoes)
  • 1 cup shredded cheddar cheese
  • 1 bag Nacho flavored Doritos 10-ounce, lightly crushed (plus extra for garnish)
  • 1/4 cup green onions thinly sliced
  • 1 cup Catalina or French dressing (store-bought or homemade)
  • Fresh cilantro for garnish (optional)
  • Sour cream for garnish (optional)

Instructions
 

  • In a large skillet, cook the lean ground beef over medium-high heat, breaking it up until it's browned and no longer pink. Drain any excess fat to keep it healthy.
  • Stir in the taco seasoning and water, cooking for just one minute until the flavors meld nicely. Remove from heat.
  • In a big salad bowl, layer the fresh chopped lettuce, the seasoned taco meat, black olives, drained black beans, colorful cherry tomatoes, shredded cheddar cheese, crunchy Doritos, and thinly sliced green onions.
  • Pour your favorite Catalina dressing evenly over everything. Gently toss the salad to ensure every bite is coated with that delicious, creamy flavor.
  • Serve right away, optionally garnished with a dollop of sour cream and fresh cilantro for an extra touch of freshness!
