In a small bowl, whisk together the almond flour, coconut flour, Swerve, baking powder, and xanthan gum. Set aside.
In a large bowl, melt the butter. Stir in the vanilla extract and half the dry mixture, then beat with a hand mixer until combined.
Add the egg and mix again. Add the remaining dry mixture and beat until a dough forms.
Place the pecans in a zip-top bag and crush them with a rolling pin. Fold the crushed pecans into the dough until evenly distributed.
Turn the dough onto a sheet of parchment paper and shape it into a rectangular log. Roll the log tightly in the parchment and freeze for 30 minutes.
Preheat the oven to 350°F and line a baking sheet with parchment.
After 30 minutes, slice the log into 1/4-inch thick rounds. Place them on the baking sheet and bake for 15 minutes, until the edges are golden. Let cool completely.
Melt the cacao butter in a microwave-safe bowl, then stir in the Swerve. Dip cooled cookies halfway into the glaze and freeze for 20 minutes to set.
Prepare frostings: Beat ingredients for each frosting separately until smooth. Pipe mummy stripes onto the glazed cookies and add two dots for eyes.
