Ingredients
  

Casserole Base

  • 10 large whole eggs
  • 2 cups diced ham
  • 2 cups shredded cheddar cheese divided
  • 1/3 cup heavy cream
  • 1/2 cup red bell pepper seeded, ribs removed, and chopped
  • 1/4 cup minced onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9" x 13" casserole baking dish with nonstick spray.
  • In a large mixing bowl, combine the eggs, heavy cream, salt, and pepper. Use a hand mixer to whip them for about 2 minutes until they are well combined and light and fluffy.
  • Gently stir in the diced ham, chopped red bell pepper, minced onions, and a little less than half of the shredded cheddar cheese. This step adds wonderful flavor and texture!
  • Pour this delicious mixture evenly into your prepared casserole dish.
  • Sprinkle the remaining shredded cheese over the top. Bake for 25-30 minutes, or until the eggs are completely set and the cheese on top is beautifully golden and bubbly. Enjoy your perfectly baked, healthy casserole!
