Casserole Base
- 10 large whole eggs
- 2 cups diced ham
- 2 cups shredded cheddar cheese divided
- 1/3 cup heavy cream
- 1/2 cup red bell pepper seeded, ribs removed, and chopped
- 1/4 cup minced onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Preheat your oven to 350°F (175°C). Lightly grease a 9" x 13" casserole baking dish with nonstick spray.
In a large mixing bowl, combine the eggs, heavy cream, salt, and pepper. Use a hand mixer to whip them for about 2 minutes until they are well combined and light and fluffy.
Gently stir in the diced ham, chopped red bell pepper, minced onions, and a little less than half of the shredded cheddar cheese. This step adds wonderful flavor and texture!
Pour this delicious mixture evenly into your prepared casserole dish.
