Soup Ingredients
- 1 tablespoon olive oil
- 2 ribs celery finely chopped
- 1/3 cup carrots diced
- 1/4 cup onion chopped
- Salt and freshly ground black pepper to taste
- 2 cloves garlic minced
- 1 teaspoon dried thyme
- 4 cups chicken broth (bone broth for extra nutrition)
- 1 1/4 pounds boneless, skinless chicken thighs (or breast), cut into bite-sized pieces
- 8 ounces Palmini noodles (or shirataki noodles), rinsed and drained
Warm up a large pot or Dutch oven over medium heat, then add the olive oil. Toss in the chopped celery, carrots, and onion, seasoning lightly with salt and pepper. Sauté gently for about 4 minutes until they start to soften.
Stir in the minced garlic and dried thyme, cooking for just one more minute until fragrant. Pour in the chicken broth.
Bring the broth to a gentle simmer. Add the chicken thighs to the pot and continue simmering for about 15 minutes, or until the chicken is thoroughly cooked and tender enough to shred easily.
While the chicken simmers, prepare your Palmini noodles by draining them from their package and rinsing them well under cool water.
Carefully remove the cooked chicken from the pot and shred it using two forks. Return the shredded chicken to the pot, then add the rinsed Palmini noodles. Cook for a final few minutes to warm the noodles through and allow them to absorb the delicious broth.
